Our Local Reserve whole brisket is raised by the owner of Light Hill Meats. It is not only delicious but also comes with a story of passion and dedication to quality.

Owner, Ben Neale, personally oversees the care and feeding of our cattle, ensuring that they are raised with the highest standards of animal welfare in bountiful pastures in middle Tennessee. We believe that this attention to detail results in a superior product that is not only better for the animal, but also for the consumer.

Our briskets are hand-selected for their marbling and tenderness, and are aged between 10-14 days to enhance their flavor and texture. 

Whether you're a seasoned pit master or a novice home cook, our locally-raised whole brisket is the perfect choice for your next BBQ or family dinner.

Cooking suggestions:

Cooking a brisket requires time and patience, but the results are worth it. To get started, remove the brisket from the refrigerator and let it come to room temperature. Preheat your oven or smoker to 225-250°F, and place the brisket on the rack fat-side up. If you're using a smoker, add wood chips or chunks to create smoke and add flavor.

Let the brisket cook low and slow for 8-12 hours, or until the internal temperature reaches 195-205°F. It's important to resist the urge to check on the brisket too frequently, as this can cause temperature fluctuations that can affect the final product.

Once the brisket is fully cooked, remove it from the heat and let it rest for at least 30 minutes to allow the juices to redistribute. Slice against the grain and serve with your favorite BBQ sauce or rub.

Cooking a brisket is a labor of love, but with the right technique and a little practice, you'll be able to produce a mouth-watering meal that will impress your friends and family.

All frozen products will be shipped in an ice box three times a week, Monday, Tuesday and Wednesday. Frozen goods cannot be shipped with other products.

Dry Goods 

All dry goods will be shipped as soon as items are available.

Fresh Meat Products 

Fresh Meat products can only be picked up from Spring Hill Store or Lynnville Processing Plant.
